Recipes
Combine in bowl:
1.5 lbs ground beef
1/2 cup regular white rice
2/3 cup milk
1 T dried minced onion
1 t salt
pepper to taste
When mixed thoroughly, drop in spoonfuls (about 2" diameter)
in rows in 12X9" baking dish (Pyrex 2 qt). Set aside while making sauce.
In food processor, finely chop onion & green pepper to equal 3/4 cup each.
Add:
1/3 cup cider vinegar
3/4 cup catsup
3/4 cup water
2-3 T Worchestershire
4-5 T sugar (white or brown)
Process till blended.
Pour sauce over meatballs in dish; cover with foil. Bake at 350 for 1 hour.
Serves 6-8. Recipe can easily be doubled and frozen; Thaw before baking.
